Regional Food Is the Real Story
There's no single 'American food' — the country's cuisine is best understood region by region, shaped by immigration, geography and local produce. A food-focused trip benefits from picking regions rather than trying to sample everything everywhere.
The Northeast leans toward delis, bagels and seafood; the South is defined by barbecue and comfort food; the Southwest blends Mexican influence into Tex-Mex; and the West Coast champions fresh, produce-forward and Asian-influenced dishes.
Northeast and New York
New York's food identity runs through its immigrant history — classic Jewish delis with pastrami sandwiches, Italian-American red-sauce restaurants, and the city's famous bagels and pizza-by-the-slice culture. New England, further north, is known for lobster rolls and clam chowder.
Philadelphia's cheesesteak and Boston's seafood are worth detours if your route includes the wider Northeast.
The South: Barbecue and Comfort Food
Barbecue styles vary distinctly by state — Texas favors beef brisket, the Carolinas favor pulled pork with vinegar-based sauce, and Memphis is known for dry-rub ribs. New Orleans stands somewhat apart with its Creole and Cajun cooking — gumbo, jambalaya, and beignets.
Southern comfort food more broadly (fried chicken, biscuits, grits) is worth seeking out beyond the barbecue joints, especially in Nashville and across Georgia.
West Coast and Southwest
California's produce-driven, farm-to-table style (largely credited to the Bay Area) emphasizes fresh, seasonal ingredients, alongside a strong Mexican and Asian food influence, especially in Los Angeles and San Francisco. Arizona and New Mexico lean into Southwestern and Tex-Mex flavors, with green chile a signature ingredient in New Mexican cooking.
Seattle and the Pacific Northwest are known for excellent seafood, particularly salmon, alongside a strong coffee culture that shaped the modern café scene nationwide.
